Why Are My Waffles Not Crispy?
Crispy waffles come down to two things: the batter and keeping them warm. Most soft waffle problems are easy to fix.
The 5 Most Common Causes
Too much moisture in batter
A thin or wet batter produces steam inside the waffle iron, making waffles soft and soggy.
Use slightly less liquid. Adding 1 tbsp cornstarch per cup of flour dramatically increases crispiness by absorbing excess moisture.
Waffle iron not hot enough
A cool iron doesn't brown the outside fast enough, producing a pale, soft waffle.
Preheat the waffle iron fully before adding batter — at least 3–5 minutes. It should be very hot when you pour.
Lifting the lid too early
Opening before the waffle is done causes it to tear and remain soft.
Wait until steam stops coming out of the iron — that's the signal the waffle is done.
Stacking waffles on top of each other
Hot waffles release steam when stacked, making each other soggy.
Place finished waffles in a single layer on a wire rack in a 200°F oven. Never stack them.
Using butter instead of oil
Butter has water content that creates steam. Oil produces a crispier exterior.
Use a neutral oil (canola, vegetable) instead of or in addition to butter for crispier waffles.
💡 Prevention Tips
- ▸Cornstarch is the secret to crispy waffles — replace 2 tbsp of flour with cornstarch.
- ▸Separate eggs and fold in whipped whites for extra lift and crispness.
- ▸Keep finished waffles in a 200°F oven on a wire rack — they stay crispy for 30+ minutes.
- ▸A Belgian waffle iron with deep pockets holds batter better and gets crispier edges.
